Superfood Salad with Salmon

Eye Candy for the Whole Family while filling up on delicious protein & dense nutrients!

What you Need:

3 cups baby arugula
2 – 4 ounce pieces of salmon
1/2 cup fresh strawberries, sliced 1/2 cup slivered almonds, roasted (375F for 10 minutes)
1/2 cup blueberries, rinsed
2 tbsp. crumbled goat cheese 2 tbsp. coconut oil
1 tbsp. olive oil
1 tsp balsamic vinegar
sea salt & black pepper to taste fresh mint, optional

Instructions:

  1. Heat the coconut oil in a pan stovetop, sear the salmon on both sides until desired doneness has been reached, about 10 minutes total, season with salt & pepper.
  2. In a large bowl, toss together arugual, berries, and almonds.
  3. Mix olive oil and balsamic vinegar, add to salad, toss lightly
  4. Divide on plates, add salmon on top, and sprinkle with goat cheese and fresh mint.
    (Serves 2)
