
Superfood Salad with Salmon
Eye Candy for the Whole Family while filling up on delicious protein & dense nutrients!
What you Need:
3 cups baby arugula
2 – 4 ounce pieces of salmon
1/2 cup fresh strawberries, sliced 1/2 cup slivered almonds, roasted (375F for 10 minutes)
1/2 cup blueberries, rinsed
2 tbsp. crumbled goat cheese 2 tbsp. coconut oil
1 tbsp. olive oil
1 tsp balsamic vinegar
sea salt & black pepper to taste fresh mint, optional
Instructions:
- Heat the coconut oil in a pan stovetop, sear the salmon on both sides until desired doneness has been reached, about 10 minutes total, season with salt & pepper.
- In a large bowl, toss together arugual, berries, and almonds.
- Mix olive oil and balsamic vinegar, add to salad, toss lightly
- Divide on plates, add salmon on top, and sprinkle with goat cheese and fresh mint.
